Comments (Updated):
- Damn good clear soup. Shio is "salt-base".
- Cha-shu melts in your mouth. Always go for additional toppings.
- Noodles are home-made and chewy. Doesn't taste like instant noodle (like at some other ramen shop).
- Apparently, ingredients are fresh and flown daily from Japan. Apparently.
- With other soup base (e.g. tonkatsu, miso) sure there are better options ... but for Shio this is the best.
The noodles are handmade and very chewy. There are a few types of soup base - miso, spicy miso, shio, tonkatsu. I personally prefer miso because I like corn with the soup.
